Vegetarian sushi, not only does it taste great but is an excellent way of reducing the vast quantity of fish consumed, following its popularity.
Most people think that the end result of sushi has to be pretty and perfect but with the ‘Hand Roll’ those rules don’t apply. Cook Vegetarian Magazine wanted me to give their readers a quick easy way to eat sushi at home, so the ‘Hand Roll’ was my first option. The fillings I used give a great deal of flavour and are so easy to roll. Make sure you use fresh shiso if you can get hold of it, it makes a real difference.
